Balsamic Chicken, Roasted Vegetable and Feta Salad


As always, I am trying to find recipes that will jazz up my lunch hour (well in my case excite me whilst I sit at my desk working). Salads are a staple for me, and most of the time I have the same thing over and over again, but how boring does that get?   So one day when I had some roasted veggies left over I decided to incorporate them into my daily salad to jazz it up a bit! 

This salad is full of healthiness, loaded with the good stuff and tasty to boot. Perfect Lunchtime treat! 



Preparation Time: 15 Minutes
Cooking Time: 30 Minutes
Serves 2
You Will Need: 

2 Chicken Breasts (around 165g each)
(feel free to use a pre packaged roasted vegetable selection if easier for you)
Courgette Sliced
Pepper Colour of your Choice Diced
Large Red Onion cut into quarters
Small Punnet of Cherry Tomatoes
60g Light Feta Cheese cubed or crumbled
2 Tbsp Balsamic Vinegar
1 Tsp Garlic Granules
2 Tsp Dried Oregano
Bag of Prewashed Slad of your choice - I used
Salt & Pepper for Seasoning
Frylight/Calorie Controlled Oil Spray
Balsamic

Method: 
Preheat oven to 200 degrees

In a small bowl add the vinegar, salt, pepper, 1/2 tsp of garlic granules and 1 tsp oregano
Place the chicken in the bowl and mix around so that it gets covered in the mixture and set aside for 10 minutes to marinade

Place all your vegetables into an oven dish and spray with oil - sprinkle the remaining garlic granules and oregano over the top - roast in the oven for 25 minutes until cooked through

In a griddle or frying pan fry the chicken until cooked through, and has a lovely dark crust

Assemble the salad by distributing the salad leaves into two bowls add the roasted vegetables and splash with balsamic vinegar and mix the leaves and the veggies.

Slice the chicken into strips and add on top of the salad - add the feta and you are on a train to flavour town!

    1. Thanks for the comment - and for the reccomendation - it is one I am going to work on - so hopefully in the near future all my recipes will have a step by step photos to make it easier to follow! Keep you posted!
