Chicken & Chorizo Flatbread with Garlic Mayo

A quick and easy dish, inspired by the weekly food markets near my office. 
Tasty, wholesome and most of all good for you! 

Preparation Time: 5 Minutes
Cooking Time: 10 -15 Minutes
Serves 2
You Will Need: 
2 Skinless Chicken Breasts (around 165-175g each) Sliced/Diced
4 Thin Slices of Chorizo (I use Sainsbury's Own)
Salt & Pepper for Seasoning
Frylight/Calorie Controlled Oil Spray
4 Tbsp Extra Light Mayo ( I used Hellmann's)
1 Tsp Dried/Granulated Garlic or One Crushed Garlic Clove
2 Wholemeal Flatbreads ( I use Hollyland Khobez)
Red Onion
Parchment/Baking Paper


Heat a little oil in a frying pan - gently fry the chorizo slices until the oils start to come out

Season the chicken and add to the pan - you will see how it turns a nice golden colour from the chorizo
for around 7 minutes until all the chicken is cooked through

Heat the flatbread in the microwave for 10-20 seconds for it to become more plyable - or gently heat in a frying pan if preferred

Cut about a 30cm long piece of baking/parchment paper and lay on the surface and place your Khobez in the middle

Add 4 Tablespoons of the mayonnaise into a small bowl and stir in the tsp of dried garlic – if you using fresh add the crushed clove into the mixture – and stir well (you can add some parsley if you like at this point for extra flavour)

Add 1 Tablespoon of the garlic mayonnaise on to the Khobez, add your lettuce, tomato, cucumber and red onion – and any other salad bits you like

Top with the chicken and chorizo – if you can do it in alternative layers, chicken, chorizo, chicken, chorizo etc etc (so you get a good bite each time)

Add another Tablespoon of the mayonnaise on top of the chicken and chorizo

Roll the Khobez as you normally would with a wrap but don’t’ tuck in the bottom, start to roll it in the baking paper and fold the bottom upwards to hold everything in, and roll the paper until the wrap is covered (like they would do in a cafe or a kebab shop)

Not only does this keep all the filling from falling out, you will wow your guests by how fabulous it looks!
