Chicken & Sweet Potato Hash



A dish inspired by travels in the US.  One that came together one day when I had no idea what to make for dinner, stepped into the fridge and saw the sweet potato and knew exactly what I had to do! 
Not only is this dish extremely tasty, but full of healthy proteins, and the poached egg just adds a little bit of magic!

Preparation Time: 15 Minutes
Cooking Time: 25 Minutes
Serves:  2

You Will Need:
200g Sweet Potato Diced
1 Chicken Breasts Diced
Red Onion Sliced
1 Pepper Diced
200g Mushrooms Sliced
2 Medium Eggs
2 Garlic Cloves
1 Tsp Smoked Paprika
Salt & Pepper for Seasoning
Frylight/Calorie Controlled Oil Spray

Method:
In a pot of salted water, simmer the potatoes until tender, drain and set aside
Heat some oil in a heavy bottomed frying pan, add the onion, pepper garlic, smoked paprika and saute until lightly browned - add the mushrooms about 3 minutes before this happens to soften. Remove from the pan and set aside
Give the pan another spritz, and fry the chicken until cooked through.  Add the potatoes to the pan, and dry fry them until they become crispy on the outside, but fluffy in the middle.  Return all the veggies to the pan and heat through. 
In the meantime poach the eggs, in my opinion they are best with a runny yolk with this dish. 
Plate up the Sweet Potato Hash, top with the egg and enjoy!
