Heuvos Rancheros 'Ranchers Eggs' are a traditional breakfast dish served mid morning in Mexico after a hard mornings graft!
I love all the different flavours and textures that you can make with this dish, adding simple ingredients to make something that will leave you wanting more and more!
Traditionally Huevos Rancheros are usually served with rice and beans, but I have scaled down the recipe a little but kept all of the flavours there!

Serves 2
You Will Need:
2 Medium Eggs
2 Flour Tortilla Wraps ( I used Weight Watchers Own for this recipe)
5 Salad Tomatoes Diced
1 Clove Garlic Minced
Small Red Onion 3/4 diced 1/2 sliced
3 Slices of Jalapeno in brine chopped - you can use more or less depending on your spice level
Pinch of Dried Oregano
20g Reduced Fat Cheddar Cheese (I used Low Low)
Salt & Pepper for Seasoning
Frylight/Calorie Controlled Oil Spray
Method:
Preheat the oven to 200 degrees
In a small frying pan sprayed with oil, soften the onion, garlic and jalapeno
Add the tomatoes and cook down until soft and juicy - season and add the oregano
Place the tortillas onto a baking tray and carefully crack an egg into the centre of each one
Put the tray in the oven being careful that the eggs don't fall off - and bake for 3-5 minutes
Place the tortilla with the cooked egg on a plate, top with the salsa and the cheese and the sliced red onion
Devour!
*If using cheese as HEXa and Wrap as HEXb
