I have been so fed up with the weather, there is no sign of it getting better anytime soon it's March for goodness sake, why is it still snowing??? So it doesn't look like I am going to be able to get a holiday anytime soon, so decided I would take myself to the sun with my food!
I've taken a little trip to the Isle of Jamaica, well my version which would probably be more like the Isle of Wight with my very unauthentic recipe, but the flavours are there - and if you closed your eyes ish.. You can just feel the breeze from the waves....

Preparation Time: 5 Minutes
Cooking Time: 30 Minutes
Serves 4
You Will Need:
8 Chicken Drumsticks Skin Removed
4 Tbsp Tomato Ketchup
1 Tbsp Jerk Seasoning ( I use Schwartz)
Salt & Pepper for Seasoning
Frylight/Calorie Controlled Oil Spray
Pastry Brush
Method:
Preheat the oven to 180 degrees
Mix the Ketchup and Jerk Seasoning in a small bowl
Place the chicken on a baking tray that has been sprayed with oil, and season with salt & pepper
Using the pastry brush, coat the drumsticks with half of the sauce on one side (if you don't have a pastry brush you can use a small spoon or spatula)
Bake in the oven for 15 minutes
Take the tray out of the oven and turn over the drumsticks, brush with the remaining spice mixture and put back in the oven for another 15 minutes
The chicken should be tender, sweet and spicy
Serve with Rice, and Coleslaw
