Lamb Koftes


I’ve just come back from a glorious holiday visiting Marmaris in Turkey.  At first I was a little miffed by the lack of authentic food that I found there, most of the restaurants catered to brits abroad when all I wanted to do was eat proper Turkish food!    We hired a boat for the day and the captain cooked us the most wonderful food.  How he made this feast in the smallest two hob kitchen is beyond me – but it was a delight and a memorable part of our holiday!   He served us the most fantastic Koftes and ever since I have got back I have had a hankering for these little tasty delights!

My recipe may not be the most authentic, but they taste pretty darn good – and I have some good testimonials to them!



Preparation Time: 10 Minutes

Cooking Time: 15 Minutes

Serves 4-6
 
You Will Need:

500g Lean Mince Lamb (can be substituted with beef if you prefer)
1/2  Red Onion Grated
2 Cloves Garlic Crushed
1 1/2 Tsp Cumin
1/2 Tsp Ground Allspice
1/2 Tsp Dried Oregano
1/4 Tsp of Crush Chilli add more or less depending on how you like it
1/2 Tsp Paprika
Bunch of Flat Leaf Parsley Chopped
2 Tsp Lemon Juice
Salt & Pepper

For the Garlic & Lemon Yoghurt

You Will Need:
Tub of 0% Total Greek Yoghurt
1 Garlic Clove minced
2 Tsp Lemon Juice

Method:

In a big bowl combine the mince, onion, garlic, spices,parsley, lemon juice and seasoning

Divide the mixture into equal sized balls and flatten to be more like patties rather than balls

Heat a griddle pan and fry the koftes until cooked through (they expel a lot of fat so you won’t need to use any oil – you can spray a little oil in the pan if you want)

Using the Yoghurt pot, add the garlic and lemon juice to the yoghurt and stir – if you can leave in the fridge until you want to use it, otherwise you can serve straight away

Drizzle the yoghurt on top of the Koftes or dip!
