I'm a big fan of cheese- and a big fan of aubergine - and this dish just combines the two.
For years and years I have been trying to perfect my recipe for this to make it taste as good as a restaurant, and that was before I stopped cooking with oil! Now faced with the challenge of no oil which aubergines love - how was I to get my Melanzane to be up to par now?!
Today I had this again for lunch, and to be honest I could have been transported to a restaurant it was fabulous even if I do say so myself - cheesy tomatoey goodness teamed with a fabulous sweet aubergine - perfection in my books!

You Will Need:
2 Aubergines - Sliced into rounds - and spr
Sugo di Pomodoro - or a 750g jar of Tomato Passata
2 Tbsp Parmesan Cheese Grated
125g Light Mozzarella Cheese
Frylight/Calorie Controlled Oil Spray
Salt & Pepper for Seasoning
10 Basil Leaves
Method:
Preheat oven to 200 degrees
Sprinkle some salt on the aubergine rounds and spray with a little oil
In a large frying pan sprayed with oil cook the aubergine rounds for around 2 minutes on each side take out the pan and set aside
Add some of the tomato sauce to the bottom of a baking dish and add half of the aubergine slices
Ladle more of the sauce over the aubergine slices and then sprinkle a tablespoon of the parmesan cheese and tear 5 of the basil leaves on to the top
Ladle the rest of the sauce on to the top of the Aubergines and again sprinkle the remaining parmesan cheese on top and the basil leaves

Bake in the oven for 15-20 minutes the sauce will bubble, and the cheese will melt - you want to try and get it at stringy best don't let it brown so keep an eye on it after 10 minutes
