Meatball Soup


Doesn't sound right does it?  Meatball Soup I hear you say - she is crazy I hear you think.. You may think that, but trust me you will love this! 
I first stumbled upon the thought of meatball soup, in Pret a Manger, they have it on their menu, and the thought of it got my taste buds going.. So I ordered it, and where it was a lovely soup - there were no meatballs to be found - just mince. 
I vowed then to make my very own meatball soup - with actual meatballs in it, because to me the idea is genius! 
Finally I did it, after about 3 years of saying that I would, and it went down very well in the Kitchen! I made a batch of it for the week to take to work for my lunch - but this morning was left with one little portion after my family ate the rest!   
Must have hit the spot! 
Preparation Time: 15 Minutes
Cooking Time: 40 Minutes* Can be made a lot faster, but I like to cook for a long time to get the flavours deep into the soup
Serves 6
You will Need:
For the Meatballs
250g Extra Lean Mince Beef
1 Tbsp Granulated Onion
1Tbsp Garlic Powder/Salt
1 Tbsp Parmesan Cheese
Bunch of Flat Leaf Parsley Chopped
Salt & Pepper for Seasoning

For the Soup
2 Cans of Tomatoes – I use Skinless Cherry Tomatoes in Juice as I find the Flavour nice and rich!
1 Tbsp Tomato Puree
150g Mushrooms Sliced
1 Small Carrot Diced
2 Small Sticks of Celery Diced
1 Small Onion Diced
2 Garlic Cloves Sliced
1 Leek thinly sliced
2 Beef Stock Cubes
1.0 Litres of Boiling Water - 300ml extra to add gradually if the soup is too thick
10 Basil Leaves - chopped
3 Fresh Oregano Stalks (If you don’t have fresh, use a tsp of dried)
Bunch of flat leaf parsley – chopped
Salt & Pepper for Seasoning
Frylight/Calorie Controlled Oil Spray

Method:
In a heavy bottomed saucepan sprayed with oil, start to sauté your garlic, onion, carrot and celery (soffrito) for around 5 minutes
Fabulous Find: M&S sell pre frozen par cooked soffrito  Click here for details – It’s a life saver! If using this – use 5 Tbsp
Add the Leek and sauté for a further 3-4 minutes if thinly sliced, a little longer if thicker
Add the mushrooms and cook until soft 2-3 minutes
Pour in the tomatoes and stir – let simmer for 2 minutes to take on the flavour
Make up the stock cubes in the water and add to the pan
Add the Tomato puree, and the Chopped herbs and simmer for 10-15 minutes

Making the Meatballs

In a mixing bowl, add the mince, garlic and granulated onion, parmesan cheese, parsley and salt & pepper
Mix together with your hands until all the ingredients are combined and roll into mini meatballs
The mixture will make 30 mini meatballs
In a non stick frying pan sprayed with oil, gently brown the meatballs until cooked about a third of the way through should take about 5 minutes
When ready place on some kitchen towel, to drain any excess fat and add to the saucepan with the soup
Simmer the soup with the meatballs for another 20 minutes and it's ready to rock!
