Posh Tomato Soup


Who doesn’t love soup? There is nothing better than a steaming bowl of the hot stuff at lunchtime to set you on your journey for the rest of the day!
I used to work in an office that didn’t have a microwave, so I could never bring in the kind of things that would get me through the rest of the long days in the winter.
I was lucky to have a Prêt a Manger close to my office which I had been told had some good soups – so decided to check in – I’m a BIG fan of tomato soup, and their version became a BIG lunchtime staple..
Nowadays, as you know – I like to cook everything myself! J And as soon as the weather went on the change, I decided to try my hand at my version of their delicious soup!   To be honest, its completely different – but ridiculously tasty, decadent – and to top it off... LOW in Calories!
Also – The soup is so versatile, that you can change it up so you don’t have the same thing every day – try topping with roasted peppers, some crispy bacon – or stir in a little pesto!
Preparation Time: 10 Minutes
Cooking Time: 1 Hour
Serves 8
  
You will Need:
2 Cans of Chopped Tomatoes
1 Large Onion Diced
5 Cloves of Garlic Crushed
60ml White Wine
10 Basil Leaves
3 Sprigs of Fresh Oregano/2 Tsp of Dried Oregano
Handful of Chopped Parsley/ 1 Tbsp of Dried Parsley
500 Ml Boiling Water
2 Vegetable Stock Cubes – I use OXO
4 Tbsp of Elmlea Light Single Cream Alternative
Frylight/Calorie Controlled Spray Oil
Salt & Pepper for Seasoning

Method:
In a heavy bottomed saucepan on a medium heat sauté the onions and garlic until they are softened and translucent in colour
Pour in the wine and let cook into the onions for about a minute
Add the cans of tomatoes and let simmer for 2-3 minutes
Make up the stock with the water and pour into the pan
Cover the pan and simmer on a medium heat for 20 minutes – season with salt & pepper
After 20 minutes – add in the herbs and cook for another 30
Five minutes before the soup is ready add the cream and blend..
Serve in big bowls topped with a bit of parmesan cheese for extra decadence!
