Spinach Rice (Spanakorizo)



I apologise in advance to any Greek people in the world who are reading this recipe.   I will hold my hands up and confess, this recipe is completely unauthentic - im sure there are people who have spent years trying to refine their very authentic recipes for Spanakorizo, and I come in with little to  no knowledge apart from eating the stuff and create my very own speedy version!!


It is no secret that I love Greek food, to be frank I love Greece as a whole, but their food unpretentious, fresh and delicious holds a little space in my heart.   I never really set out to devise this recipe - but I had some spinach in the fridge and some rice in the cupboard that I wanted to use, did a but of research, and decided on this (all the while not knowing that I actually had a recipe all along in the Tonia Buxton's My Greek Kitchen Cookbook which I was given at my cookery class a few weeks ago! 
Traditional Spanakorizo is made more like a pilaf, all the ingredients allowed to cook together to make a wonderful dish full of flavour and wonderful texture. However, I have managed to go completely opposite by using microwaved rice and whipped up in less than 10 minutes!   Even for such a speedy meal - the taste you get and the end product is a winner and after I gobbled it up, I didn't feel too ashamed that I had totally disregarded a Greek staple!

Preparation Time: 5 Minutes
Cooking Time: 10 Minutes
Serves: 2

You Will Need: 
240g Cooked White Long Grain Rice ( I went for a Microwaved version)
1 Big bunch of spinach washed and chopped
1 Onion Diced
1 Garlic Clove Minced
Bunch of flat leaf parsley chopped (traditional recipes call for dill and mint, but I didnt have any on hand - but it does add an amazing flavour!)
1 Tablespoon Tomato Puree
Squeeze of Lemon (again not really traditional but I think it added a nice twist)
Salt & Pepper for Seasoning
Splash of water
Frylight/Calorie Controlled Oil Spray

Method:
If using microwave rice, cook according to package instructions
In a pan sprayed with oil, gently soften the onion and garlic, add in the tomato puree and a dash of water to loosen, stir
Add the spinach and lemon juice and wilt, once it has cooked through, stir into the onion and garlic mixture that will have formed underneath
Add the rice to the pan, heat and stir through
Season with Salt and Pepper and Serve! 


* Free if using dried rice you have cooked yourself.  Add 1.5 sins to the recipe if using microwave version
** Free if using brown rice
