Every Italian household needs a fantastic Sugo di Pomodoro for the base of all their tomato based dishes.
I will from here every so often take you on my journey of Italy and this Sauce will come in very handy.
Simple but delicious, can even be eaten on its own with a bit of pasta!
Makes 2 500g Batches
You Will need:
Tomato Passata (I used 2 500g cartons)
Soffrito - 1 Onion Diced, 2 Sticks of Celery Diced small - 1 Carrot Diced
10 Basil Leaves chopped
Frylight/Calorie Controlled Oil Spray
Method:
In a large non stick frying pan sprayed with oil, saute the soffrito over a low heat until softened
Add the Tomato Passata and simmer for 10 minutes
After 10 minutes add the basil and simmer for another 15 minutes
Then its ready to use for all your culinary needs - refrigerate, freeze or cook with straight away - so versatile!
