Swedish Meatballs



My whole family have always loved the Swedish meatballs from Ikea. When someone needed something from Ikea everyone would want to get in the car too just so they could have some meatballs.  Over the years I grew out of them - they just weren't the same as they used to be - so I decided to try my hand at my own recipe.  Most likely not the traditionalist of recipes - but the gravy is divine and its a fabulous treat which is not as naughty as you think!

Preparation Time: 15 Minutes
Cooking Time: 20 Minutes
Serves 4

You Will Need:

400g Extra Lean Pork Mince less than 5% fat
Small onion diced finely
2 Tbsp fresh breadcrumbs
1/2 Tsp Ground All Spice
1 Egg Beaten
1 Beef Stock Cube (I used OXO) made up with 400ml water
1Tbsp Flour
2 Tsp Light Margarine ( I used clover lighter)
Salt & Pepper for seasoning
Frylight/Calorie Controlled Oil Spray

Method: 

Preheat the oven to 200 degrees

Mix the mince, onion, breadcrumbs. S&P and allspice in a bowl - add the egg and mix

Divide the mixture to make 20 equal sized meatballs

Spray a pan with oil, and brown the meatballs - place on a baking tray and pop in the oven to cook through for 5-7 minutes

Using the same pan that you cooked the meatballs in (don't clean it before!) add the margarine once melted add the flour and make a roux- cook down for 1-2 minutes

Add the stock and whisk continuously until all of the roux has dissolved and the sauce is glossy and shiny

Remove the meatballs from the oven and add to the gravy mixture - cook for 2-3 minutes to let the flavours combine

Serve and try not to keep nipping back to the pot for more gravy!
