Taco Tostadas


I'm a big fan of textures, I love a bit of soft, a little bit of crunchy and multiple flavour.  These tostadas have just that!!  The flavours all meld fantastically and if it's still on your plate within 5 minutes of making it.. There is something wrong with you!
Filling and tasty perfect easy mid week dinner!

Preparation Time: 15 Minutes
Cooking time: 25 Minutes
Serves 4

You Will Need:
4 Tortilla Wraps of your choice – I use WW own
250g Lean Mince Beef
1Tsp Oregano
2 Tsp Ground Cumin
1 Tsp Smoked Paprika
1 Tsp Granulated Onion
1 Tsp Garlic Powder
25ml water
170g Sweet Potato Cubed
2 Tomatoes Diced
1/2 Red Onion Sliced
Bag of Iceberg Lettuce Shredded
40g Low Fat Cheddar Cheese – I use Waitrose own
4 Tbsp Low Fat Sour Cream
Frylight/Calorie Controlled Oil Spray

Method
Preheat Oven to 200 degrees
Roast the Sweet Potato on a baking tray in the oven until soft but crisp – 20 minutes (cut the cubes quite small so they roast quicker)
In a frying pan sprayed with oil start to brown the beef, once the juices start to come out add the spices – pour in the water and cook the beef through
Place the wraps in the oven slightly sprayed with oil , watching carefully after 2 minutes turn them over and cook for another 2 minutes they should be golden brown and just crisp
Allow to cool down for a couple of minutes, and assemble.
Add the lettuce first – top with the beef, then the tomatoes, cubes of potato and onion sprinkle on the cheese and dollop on the cream
Devour!
