Thai Sweet and Sour Chicken


My family used to live in this fabulous house – my favourite of all the houses I have lived in – and just around the corner was this amazing Thai restaurant. Every so often as a treat we would get a take away from there, and ever single one of us ordered the same dish. Their Sweet and Sour Chicken.  It was so much nicer than the bright orange deep fried sweet and sour that I had been used to getting in Chinese restaurants (Don’t get me wrong – I still love that – but my waistline doesn’t).  Still to this day it is one of my favourite things to eat, so I have tried to conjure up my very own version of the Manee Thai Sweet and Sour that I loved so much growing up.   The results went down well, and I’m pleased to say I got the seal approval from Mama Lulabella herself!

Cooking Time: 15 Minutes
Serves 4  Hungry People
 
You Will Need:

2 Chicken Breasts around 165g each Diced
1 Medium Onion Diced
2 Garlic Cloves Minced
2 Peppers – colour of your choice diced (Tip: You can buy frozen peppers – if you have these chuck in two big handfuls)
200g Fresh Pineapple 

100ml Pineapple Juice
1 Tbsp White Wine Vinegar
1 Tbsp Tomato Ketchup
1 Tbsp Tomato Puree
1/2 Tsp Fish Sauce (optional)
1Tbsp Dark Soy Sauce
1/2 Tsp Ground Ginger (optional)
1 Tsp Granulated Sweetener
20 ml water
Salt & Pepper for Seasoning
Frylight/Calorie Controlled Oil Spray

Method:

In a heavy bottomed frying pan sprayed with oil, sauté the onions, garlic and peppers until soft

Season the chicken and add to the pan and stir fry 2-3 minutes, then add the pineapple

Add the pineapple juice, ginger, soy, fish sauce and vinegar to the pan and let simmer for 1-2 minutes

Pour in the water, ketchup and the puree and stir really well into the sauce you have now formed in the bottom of the pan

Season and add the sweetner – give it a taste – if the balance isn’t right add a little more sweetener to taste

Let the sauce simmer for 3-4 minutes to thicken slightly and to let the chicken cook through until soft and sumptuous

Serve with rice of your choice and enjoy!
