Turkey Meatball & Potato Bake

I was chatting to my mama about this dish the other day, telling her where I got the inspiration for it from.  7 years ago It was my lovely youngest sister's 18th Birthday and My Dad had come over from the US to celebrate.  He took us to this amazing restaurant called Daphne's in South Kensington, London where we were to have a fabulous meal.  Mama Lulabella found it quite funny that I could remember what everyone had eaten that day, let alone get inspiration from it! I simply told her, I might not be able to tell you what happened a few years ago, but I can sure tell you what you ate!!  I think that shows my love of food - or that I am bonkers?! 

The restaurant serves amazing Italian inspired food, I remember I had Veal, my elder sister had Rabbit Ragu and my youngest sister, wasn't able to find anything she liked.  So instead of a drama occurring I cast my eye over the menu and saw that they had braised meatballs and potatoes on the menu - mentioned it to her and as there was nothing else she really liked, she agreed.  When the food came out she was happy as anything, and we all had food envy!  Was one of the best dishes ordered, and she left with a smile on her face!

I've lightened up the dish a little using Turkey mince - but this is an amazing comfort dish, and makes fabulous left overs for lunch the next day!

Preparation Time:

Cooking Time: 30 Minutes
Serves 2

You Will Need:

250g Turkey Breast Mince
1 Tsp Granulated Garlic
1 Tsp Granulate Onion
Bunch of Flat Leaf Parsley Chopped
400g Small Potatoes Peeled and Quarters
400g Sugo di Pomodoro (recipe can be made using one tin of tomatoes)
1 Tbsp Grated Parmesan Cheese Optional
Salt & Pepper for Seasoning
Frylight/ Calorie Controlled Oil Spray


Preheat oven to 200 degrees

Heat some salted water in a heavy bottomed pan, add the potatoes and cook until softened, drain and set aside

In a large bowl, add the mince, garlic, onion salt and pepper and parsley, mix loosley and make equal sized meatballs the mixture. You should be able to make 8 Medium Sized Meatballs/16 Mini Meatballs

In a frying pan sprayed with oil, brown the meatballs on all sides, to give them a little colour and to seal in the flavour - set aside

Pour the tomato sauce into the bottom of an oven proof dish - I like to use two smaller ones, to make individual portions.

Add the potatoes and meatballs in equal quantities to the oven dish, top with the parmesan cheese and bake in the oven for 15 minutes or until the meatballs are cooked through and still juicy.
