This is a super easy, tasty cheeky little number. Perfect for a quick midweek dinner especially
when the weather is glorious!
The first time I came across lettuce wraps, was when a
friend of mine was on a low carb diet.
I was totally unconvinced that using lettuce would be able to take the
place of my beloved tortilla wraps, taco shells etc. But I am to hold my hands up high on this
one, and declare that I was totally wrong – because I then became a total
convert! I find that using lettuce wraps in a recipe
such of this, compliments and takes it to another level! Sometimes, when I am using soy in a recipe,
I find it to be a little too harsh – a bit too salty, and am left with that in
my mouth for hours – but when you use lettuce wraps they really change the
flavour, and refresh your palette! I added
the yoghurt on top to give it another texture and takes it to another level!

You Will Need:
250g 5% Extra Lean Pork Mince
1 Tsp Chinese 5 Spice
1 Garlic Clove Minced
2 Tbsp Soy Sauce
Frylight/Calorie Controlled Oil Spray
To Serve:
1/2 Iceberg Lettuce (can use baby gem if you prefer)
1/2 Cucumber Sliced into Batons
2 Spring Onions Sliced Lengthways
4 Tbsp 0% Fat Greek Yoghurt
Method:
In a frying pan sprayed with oil, cook the pork until
browned.
Add the Garlic, 5 Spice and Soy, stir until the spices have
dissolved and are rich throughout the sauce. Cook for a few minutes, so that the pork soaks
up all the soy but is still juicy.
Separate the lettuce leaves, pile in the pork, top with the
spring onions and cucumber and a dollop of yoghurt
