Garlic & Spinach Mashed Potatoes

A creative way using vegetables to flavour your mash instead of using butter or cream!  Leaving you with a sumptuous flavoursome mash!

Since I have joined slimming world and am trying to find more and more ways to not have to use oil or butter in my food (during my WeightWatcher’s time, I felt like I could still get away with it),  i’ve had a few questionable attempts, but I find that replacing things with flavours or stock, although not perfect, don’t make me miss it too much and help me on my journey.  Here is one of my most successful attempts – and I can’t wait to eat some more!

Preparation Time: 10 Minutes
Cooking Time: 20 Mins
Serves : 4

You Will Need:

800g Potatoes, peeled and Diced
2 Garlic Whole Cloves Peeled 
100g Baby Spinach
Frylight/Calorie Controlled Oil Spray


Cook the potatoes and whole garlic cloves in a large pan of salted water for 10-15  minutes depending on their size. Drain and set aside for a few minutes

In a small frying pan sprayed with  oil, gently wilt the spinach will take only 2-3 minutes

Mash the potatoes and garlic in the same pan – trying to get out any lumps, the garlic should be nice and soft so should mash quite easily.

Mix in the wilted spinach and give a final mash if you are finding it too lumpy
