Spinach & Tomato Pie


Technically a crust less quiche, but using the words 'pie' to me make it feel slightly more indulgent and exciting!    Easy peasy to make, and can be from fridge to table in around 30 mins! 



When I first start a new 'diet' (although I don't know if I would call Slimming World that), I like to delve into the archives and try out their popular recipes to give me a feel for their plan.   As most of my regular readers will know by now, I always like to think out the box - apart from breakfast, I like to vary my meals so that I don't get bored and, ultimately lead me to falling off the wagon.  Since joining a few weeks ago, I can 100% say that this is one of my favourite recipes to which I cannot take any credit for, apart from the fact that I have jazzed up my flavours each time to make my weeks more exciting.    

I've been cooking a lot with spinach recently, its so tasty and, that I decided to use it this week to jazz up my quiche and call it a pie!

 Weight Watchers Pro Points: 4PP • WeightWatchers Filling & Healthy Values: 1PP


Preparation Time: 10 Minutes
Cooking Time: 20-25 Minutes
Serves 4


You Will Need: 

5 Eggs
300g Pot Low Fat/ Fat Free Cottage Cheese with Onion & Chives (I use Sainsbury's Be Good To Yourself version, check details for other brands)
1/2 Onion Sliced
100g Spinach
1 Garlic Clove
1 Tomato Sliced
Frylight/Calorie Controlled Oil Spray 
Salt & Pepper for Seasoning

Method: 

Preheat oven to 190 degrees

Spray a frying pan with oil, and gently soften the onion and garlic - add a little water if the pan becomes too dry 

Add the Spinach to the pan and cook until wilted

In a mixing bowl, season and whisk the eggs until combined, add the cottage cheese, stir in thoroughly so that the mixture is even 

Add in the Spinach, onion and garlic mixture and stir through

Pour the mixture into a quiche, pie or oven dish, depending on what you have handy 

Top with the sliced tomato, and bake in the oven until set

Delicious hot or cold, for a lunch, picnic or snack!
