Pollo Valdostana

Chicken topped with ham, tomato sauce and oozing mozzarella cheese.  One of my fave dishes in my local Italian lightened up but super tasty! 

 This dish comes from the Val D'Osta region in Northern Italy.  Whilst mine is not the most authentic version, as usually you will find a wine based sauce, even without it, my homage to this tasty dish works a treat and will leave you wanting to lick the plate! 

Simple to make with few ingredients, but a show stopper for a dinner party or a comforting dinner for two on the sofa in front of the telly.

You Will Need: 

2 Chicken Breasts 
2 Slices of Cooked Ham 
1 Ball of Light Mozzarella Sliced
Sugo di Pomodoro
Salt & Pepper for seasoning
Frylight/Calorie controlled oil spray


Preheat oven to 180 Degrees/ Gas Mark 4/ 160 Degrees in a fan assisted oven

Season the chicken breasts and in a frying pan sprayed with oil, bown on both sides.

Place into an oven proof dish, top each breast with a slice of ham, cover both in tomato sauce and top with the sliced mozzarella cheese.

Bake in the oven for 10 - 15 minutes, until the chicken is cooked through and the cheese has melted.

Remove from the oven and serve with your fave veggies, and some crispy roast potatoes.
