Creamy Linguine with Parma Ham & Peas

Quick, easy and delicious.  A treat meal that packs in all the comfort you need for under 500 calories and only 2 syns per portion... Could something better exist?

We are all guilty of it, have a hard day and all you want to do when you return home is to eat something comforting and veg on the sofa.    Being half Italian, my ultimate comfort food is Pasta.   I don't think anything can compare to a big bowl of tomatoey goodness covered in cheese.   

When I first started my healthy eating, everyone always said to me - oh how will you cope, you will have to cut out your favorites like pasta.   Then I would come to work with  nice pasta salad or leftovers from the night before - and people would be like 'don't worry, it's ok to fall off the wagon - you can start again next week'.  But little did they realise, that even though I was eating what looked like to them something naughty, it was totally factored into my plan - and guess what?!  I still lost weight! 

This recipe, was a little bit more naughty than some of my other pasta recipes - but on this particular occasion, it had been a long day - and the only thing that was going to make me feel better was pasta.  This was a combo I had been wanting to try for ages.  I am having a bit of a love affair with peas at the moment, and I have been replacing bacon in my pasta with Parma ham for a while now - so this seemed like a good combo!  I added a little cream for an extra bit of a treat and my day got instantly better! 

Calories: 480 per portion   •  Slimming World:  2 Syns Per Portion

Preparation Time: 10 Minutes
Cooking Time: 25 Minutes
Serves: 4

You Will Need: 
1 Onion Diced Finely 
1 Garlic Clove Minced
80g Pack of Parma Ham - diced 
350g Passata
400g Linguine
100g Frozen Garden Peas
4 Tbsp Elmlea Single Light 
Salt & Pepper for Seasoning
Calorie Controlled Oil Spray 


In a frying pan sprayed with oil, gentle fry the onions and garlic until softened.  Add the parma ham and cook until light crisp

Pour in the passata and peas and turn up the heat and let simmer 

Whist the sauce is bubbling away, cook the linguine according to package instructions and drain. 

Take the sauce of the heat, and stir through the cream - toss the pasta in the sauce and serve!
